What's for Dinner?

Ok, back on track. Tonight I had to throw something together for a couple of surprise guests:

Appetizer: a sort of bruschetta with watercress, tuna packed in oil, and grated romano cheese atop toasted baguette slices

Grandma's zucchini soup recipe

Mixed greens with oil and vinegar

This fish recipe, minus olives, which I didn't have

Some Brazilian pastries I picked up earlier for dessert!

Filet of white salmon (Yum!!!) simply done:

Season the fish with salt & pepper

Heat a smear of olive oil and some thin slices of garlic in a pan

Slide the garlic out of the way

Toss in the fish, skin down, sear for 2 minutes

Pour out the oil and garlic

Toss pan under broiler for 7-8 minutes

dill on top, a little lemon juice--YUM!!!

Saturday was Salmon Teriyaki & Coconut Shrimp(New recipe, very good) with spinach sauteed in EV olive oil with lotsa garlic.

Sunday was pork chops with a dry Cajun spice rub and some olive salad.

OLIVE SALAD

1 small jar green olives with pimiento

1 small jar roasted peppers

2 pieces celery

1 clove garlic

4 tablespoons flat leaf parsley

olive oil

red wine vinegar

Chop olives coarsely, chop everything else fine(minced). Mix with oil and vinegar, add salt, pepper & cayenne pepper. Let it sit for about 20 minutes. Eat & enjoy.

Today was chicken, broccolli, string beans & red pepper stir-fried in my FLAT-BOTTOMED WOK :rolleyes: with garlic, onion, soy sauce, sesame oil, red chili paste & coconut milk. never tried all of this at once, results were outstanding!

The Easter menu at my parents house.....

Antipasto Salad

followed by...

Lasagna

Meatballs

followed by...

Chicken Cacciatore

Sausage and Peppers

All washed down with some nice red wines...

followed by...

Cannoli

and cookies (including pignoli) :tup

plus.. a little Sambuca

My mother really out did herself. She's not been cooking much since having recent heart problems.

I landed some of that white salmon Peter mentioned above.

I'm going to marinate it with some chopped up bell peppers, olive oil, salt, pepper, and garlic, then throw it on the grill.

It sounds like a little squirt of lemon might go very nicely on the finished product.

Tonight was my quick "weekday dinner." Nothing special, since I'm usually too lazy to cook much; mixed greens with some of my grandma's garlic vinagrette and grated romano, plus some rice with homemade kimchi stirred in. Nothing required any preparation except for the rice.

I'm going to marinate it with some chopped up bell peppers, olive oil, salt, pepper, and garlic, then throw it on the grill.
