Pork roast, slow cooked in cranberry sauce. We will have two "proper" meals with this and eat the leftovers on hard rolls. :)

2 lb pork tenderloin

12 oz chili sauce

16 oz can cranberry sauce (we use 'whole', you can use 'jellied')

2 Tbsp brown sugar

5 cups cooked long grain rice

1. Pork in slow cooker

2. Mix chili sauce, cranberries and brown sugar

3. Pour over pork

4. Cover and cook on "high" 4-5 hours, then on "low" 3-4 hours.

5. Serve over rice.

For the third meal (sandwiches) reduce the sauce and shred the pork.

Damn, you eat well. Are you the cook, or a blessed recipient?

I cook 98% of the time.

The trade off is I don't have to do clean anything up. :)

The downside is that I often cook too much and probably more pasta dishes than I should. I've been trying to mix in more fish and chicken.

Sounds like something I'd make. I resort to the pasta option a little too frequently myself.

But tonight I'm firing up the grill for the first time this year for some lamb shoulder chops rubbed with olive oil, garlic, and rosemary, to go with a nice bottle of Tuscan wine.
