How many pixels are in a cd cover?

there is no pixel size for a CD cover really. I presume you mean amount of pixels that produces a decent print out.

300x300, the usual "large" scale at e.g. amazon is too small for that.

the ones at walmart.com are 500x500 and big enough. They have some sort of file-size reduce mechanism that involves a kind of colour separation and rasterisation. I need to find out what it is some day as it makes for very detailed pics with very small file size.

I usually make them 1000x1000 myself, you can even read some fine print then.

so a 342 X 342 or a 1425 X 1425 image would be the exact size for a cd cover?

it's easy to load the pic into Word and tell that programme to make it 4.75"x4.75" (12x12 cm). I would not depend on actual amount of pixels to scale a print as it all depends on milimetres and set up of the printer. Most printers do not deliver an exact 300x300 or whatever px per inch.
