One of my favorite apps is Flashlight. It does exactly what it says: it turns your iPhone into a flashlight. Great for reading menus in dark restaurants.

Another one we use every day is TuneIn Radio. Allows you to get any internet radio station anywhere in the world.

These may be obvious, but here are a few on my phone that I use all the time...

Amazon

Ebay

CNN

Yelp

Shazam (much like Soundhound)

Around Me

Facebook

Wolfgang's Concert Vault

Translate (probably many similar programs)

Rovi (what AMG used to be)

Pedometer

Hubblesite

And yeah, Angry Birds!

Have y ou compared it ro Shazam? I think Soundhound claims to recognize music even if you're hearing it live, but it's never done so for me.

a thorough comparison reveals that both apps are a must! the data bases are apparently different as sound hound sometimes has things shazam does not and vice versa - and they are both FREE!!!

If you have an iPhone 4S (not a plain old 4), there's an app called Vocal, which allows you to control your iMac through talking to your iPhone. You can dictate emails, launch programs, etc. Pretty cool.
