GA Russell Posted November 25, 2011 Report Posted November 25, 2011 Jim, my hostess told me that she cooked it at the regular temperature for an hour or so to kill the germs, and then lowered the temperature to cook it for a long time. Very, very moist. Quote

Kosher salt, brown sugar, whole peppercorns and bay leaves went into the concoction. Quote
