L-cysteine, makes bread dough more elastic when stretching and kneading dough. Just mix wholewheat flour, Pilsbury Chakki Atta is about the best with a couple of pinches of salt and very slowly add water mixing and kneading until the dough is firm and not too wet. Knead for 5 minutes, cover with another bowl and leave for 10 minutes. Roll out the chapati dusted with flour and dry cook on medium heat in a non stick frying pan. They should puff up nicely, just don't have the pan too hot. Once you've mastered chapatis YouTube has a large number of similar recipes for paratha, stuffed paratha, puri and most kinds of Indian breads. Edited January 22, 2013 by kinuta Quote

I try to avoid other kinds of bread. I use a bread machine, like you Moosey, but I've never trusted the timer on any of them, so I rise at six and get the machine on by 6:20, so it's ready by ten and has cooled down enough for me to have sandwiches for lunch. I bake more or less standard wholemeal bread but add a couple of coarsely chopped Brazil nuts, three halved almonds, a few walnut pieces and a few sunflower seeds, more for the texture than the taste.
