Precisely the point I've made many times. What is the point of a vegan burger that tries it's best to look like a big mac and soy lumps that purport to be chicken nuggets ?
Seitan is called fu here and is often used in the vegetarian cuisine eaten by buddhist monks. Incidentally the food they eat , especially in Kyoto, more often than not comes from quite high end restaurants who work as permanent licenced caterers to the temples. The idea that the monks eat some humble fare knocked up in the temple kitchen is wrong. They get some seriously gourmet nosh. Personally I'm a carnivore but don't eat very much meat these days.
