Soup made with a potato broth (potato, celery, carrots, tomato paste, bay leaves, olive oil, sea salt, black pepper, and the outer rind of Parmigiano-Reggiano) cooked are about an hour. Add lentils and cook for another 40 minutes, add Ditali pasta, cook 10 more minutes.
Finish in the bowl with a drizzle of olive oil and a few pieces of Pancetta.
