JSngry Posted November 18, 2007 Report Posted November 18, 2007 Alright, this is Post 25K, a gift from me to you all: Big John's Cajun Fried Oysters This is a fairly hot dish. Regular hot sauce can be used in the place of Habanero sauce. But Why? By Big John Time to make 15 min (10 min prep) 1 quart oysters, with juice (medium Size) 2 tablespoons butter 2 whole eggs, beaten slightly 1/4 cup milk 2 teaspoons habanero sauce 2 cups cornmeal 2 teaspoons cajun seasoning 1 teaspoon cayenne pepper 1 teaspoon baking powder 3/4 cup hot pepper oil 1. Drain oysters, reserving the liquid. 2. Mix oyster liquid, eggs, hot sauce and milk. 3. Mix cornmeal, cajun seasoning, cayenne and baking powder. 4. Saute oysters in butter until edges curl. 5. Remove from heat and let cool. 6. Dip oysters first in liquid, then dredge in cornmeal mixture. 7. Fry oysters in hot pepper oil for three minutes over medium heat, turning once, (they are done when golden brown.) 8. Remove, drain on paper towels. 9. Serve immediately. Enjoy! Quote

GA Russell Posted November 18, 2007 Report Posted November 18, 2007 Remember when all of us lost some of our post count a couple of years ago? I think I lost 250, and Jim lost more than that. So all of us have reached milestones before we realized. Still, Quote
Claude Posted November 18, 2007 Report Posted November 18, 2007 (edited) Wow! When reading the thread title, I first thought 25.000 was the total number of posts for all members. Congrats Jim! Edited November 18, 2007 by Claude Quote
Daniel A Posted November 18, 2007 Report Posted November 18, 2007 The count could be restored upon request. I think Jim had his restored, so this would actually be his 25k:nd. Quote
