Or maybe an adaption of the Uncle Meat for Organ Trio with an extended percussion section including a tabla, triangle and more cowbell.

    This might be a foolish question but is Zeena Parkins a member of this board? I'm thinking of "rachel" and her mentioning that she was a musician who played Rat-type music. It came up in the past and, after her dropping some clues and my exhaustive research (google), I was left with her being Zeena. I think I'm wrong, though. Not Zeena.
